Passion for all things Low Carb started back in 1972 when Dr. Robert Atkins first book “Dr. Atkins’ Diet Revolution” came out. The Low Carb diet made sense! It worked for her as she married and started her large family of five sons and two daughters (now grown to 5 sons, 2 daughters, 2 step-daughters, 28 grandchildren & 4 great-grandchildren!). The Low Carb diet helped her when trying to lose those pesky post-pregnancy pounds. Struggling her whole life with being overweight with lots of ups and downs, it continues to be a work in progress, but she knows what works to stay healthy – LOW CARB! While enjoying & visiting with new friends on an on-line weight loss discussion group in 2008, the dream was born to combine a love of cruising with Low Carb. Little did she know that it would become an annual event with guests and seminar speakers from around the world. Debbie’s husband Don is also a very big part of the Low Carb Cruise – supporting her and helping her stay sane – adding FUN to the mix. New life-long friendships have been made over the years and she considers all her Low Carb friends as family and loves sailing and learning with them.


Became interested in The New Atkin’s Diet Revolution in 2004 when her weight was at its highest of 300 pounds. Her diabetes was out of control, so wanting to see her kids grow up she decided she needed to make some positive changes. She made friends online and in 2008 joined a venture that was to change her life forever. That first cruise she made real friends that have remained. Some of which became her lifelong best friends, Debbie and Don Hubbs and others. She believed in the LCHF way of eating and loved the idea of getting a group of people together in a place where they could share and learn. Since starting, Ailsa has lost 120 pound so far. Her now husband Chris is her rock. He has been with her through the Low Carb Cruise journey. He proposed to her on the cruise in 2012, they married the following year and had a blessing on the cruise with their Low Carb friends. Ailsa has two wonderful sons Ben & Luke and an amazing stepdaughter Amber. Ailsa loves being a part of the Low Carb Keto Cruise, it’s like a happy family reunion every year.  She is a Certified Nutritional Therapist in the UK.


Kathy Nichols began her low carb/keto journey in May 2011 with her husband, Shelton. Together they lost over 100 pounds and have discovered the many health benefits of this lifestyle in addition to weight loss. Kathy is so passionate about the lifestyle that she is currently moderating a KETO support group for a local doctor and it has been very rewarding. Shelton and Kathy have truly enjoyed the Low Carb cruises. The best part of the cruise is meeting so many experts and making brand new friendships while continuing to learn more about this fantastic lifestyle. Making friends from all corners of the world is a gift that keeps on giving.
